This sweet, tart summer salad is the perfect refreshing side dish.
Persian cucumbers, diced mango, avocado and tart pomegranate seeds combine in a crunchy and creamy salad.
Cut a thin slice off the top and bottom of the mango. Then stand it up and use a small knife to shave off the peel.
Cut off the wider sides, avoiding the pit. Then trim off any smaller pieces around the pit
Run the knife around the avocado. Then twist to split in half. Use a small knife to cut 1/4 in pieces in a grid.
Cut the cucumbers in half lengthwise. Use a spoon to scrape out the seeds. Cut each piece in half again, then cut into 1/2 inch pieces.
Chop the green onion.
