Ingredients eggs • oil • applesauce • vanilla salt • brown sugar • sugar gf flour •baking powder cinnamon • baking soda shredded carrots
This recipe can be mixed with an electric mixer or by hand with a whisk and rubber spatula.
In a large mixing bowl, beat the eggs, oil, applesauce, vanilla and salt.
Add the sugar and brown sugar and beat until the mixture is smooth and creamy.
Add the flour, baking powder & soda and cinnamon. Fold it in with a rubber spatula, then mix with a whisk or electric mixer just until smooth.
Add the shredded carrots and fold in by hand.
