Gluten-Free Peach Cobbler

The simple recipe can be made with fresh, frozen or canned peaches.  The recipe includes instructions for each option.

Biscuit Topping gluten-free flour • sugar baking powder • salt corn/tapioca starch butter • buttermilk

Add the gf flour, potato or corn starch. sugar, baking powder and salt to the food processor. Pulse 3 times to mix.

Or place the dry ingredients  in a mixing bowl and  stir to combine.

Add the cold cubed butter. Pulse 15 times to turn the mixture to coarse crumbs.

Or, if mixing by hand, use a pastry blender or fork to cut  the butter into the flour.

Add the cold buttermilk and pulse 7-8 times - just enough to bring the dough together.
