Fluffy 20 Minute  Teff Flour Pancakes

These fluffy teff pancakes are gluten-free and  ready in 20 minutes.


Whipped egg whites and plenty of baking powder make them light and fluffy.

Ingredients teff flour • gf flour • eggs • agave buttermilk • vanilla • melted butter salt • baking powder

Separate the eggs, placing 1 yolk  in a large bowl and 3 whites in a medium sized bowl (2 of the  yolks will not be used).

Add the buttermilk, agave,  vanilla and salt to the yolk.  Mix until combined.

Use an electric mixer or stand mixer to beat the egg whites  to stiff peaks

Add the gluten-free flour,  teff flour and baking powder  to the buttermilk mixture and mix with a whisk until smooth.

Stir in the melted butter
